CODY’s utilized only one layer of matcha mousse because they wanted to “create the right balance between the sweetness of white chocolate and the vegetal taste of pure and quality matcha powder.” The cake is beginner-friendly for people who like to discover Japan’s distinctive flavor, as its flavor is not overpowering and is balanced by layers of white chocolate ganache.
